Don't know about Universities in the US but you could do a lot worse that read David Rohl's books A Test of Time and Legend. I've travelled in Egypt with Mr Rohl and he's now involved in a travel company called AWT that takes tours all over the middle east, certainly worth taking their Legend Nile Cruise or one of the others.
Whilst David Rohl and his books are not a complete source on any subject they're interesting (to say the least) and go a long way to bringing one of the most fascinating subjects out of closed-minded academia without invoking fantasy or pseudo-scientific nonsense.
