I am not too sure about the whole history of the anhk , but I know it sybolizes the key of life. And a friend expalined to me that the top part of it is the woman's womb , the parts on the sides sticking out are her fallopian tubes , and the long part on the bottom is the guy's penis (sorry to say it like that). And it is joined together to form life.
